Carrot Eat Em Up Cake in a Jar

Our Carrot Eat Em Upcakes have come all dressed up to party this fall! Enjoy a fall individual sized cake in a jar.  YUMM.  Individual sized cake servings, perfect filling and YUMMY cake.  Looking for a fall Grab and Go sweet treat? Use mason jars with lids for a portable Upcake Dessert!  All dressed up, these Carrot Eat Em Upcake in a jars are also are pretty giftable treats.
  • Prep Time : 25 minutes
  • Cook Time : 18 minutes
  • Yield : 8 to 10 desserts

Instructions

  1. Prepare the Carrot Eat Em Upcake batter  per box directions.
  2. Heat oven to 350 degrees F
  3. Coat two 13 x 9 x 2 inch baking pans (or jelly roll pans) with a little butter. Line the bottom of pans with wax paper and coat the wax paper lightly with butter.
  4. Divide Carrot Eat Em Upcake batter evenly between prepared pans and spread level with a spatula
  5. Bake at 350 degrees for approximately 16 - 18 minutes, or until dry to the touch. The cake will slightly pull away from the edges of the pans and will spring back when touched.
  6. Cool For 10 minutes and then invert onto wire racks and remove wax paper.
  7. Prepare Carrot Eat Em Upcake Maple Icing, per box directions
  8. Cut 16 - 20 rounds of cake with a 2 1/2 inch  round cookie cutter. Cut an additional 8 rounds with a 2 3/4 inch cookie cutter. Place one 2 1/2 inch round cake into the bottom of a jar, compressing with fingers to fit. Spread a light layer of maple frosting on top, then vanilla pudding and sprinkle a few chopped walnuts. Repeat layering with a second 21/2-inch cake layer, 2 tbsp of the vanilla pudding and 2 tsp of the nuts. Top with one 23/4-inch cake layer. Repeat process in other jars with remaining cake rounds, remaining Maple frosting and nuts.
  9. Top each jar with 2 Tablespoons of whipping cream (whipped) and sprinkle a few nuts to garnish
Enjoy! YUMMY Gourmet Option : Beat 4 to 6 ounces of cream cheese with your Maple Frosting (prepared per directions) to enjoy a maple cream filling! Layer as directed above.
